Irish Soda Bread Recipe

This first post is dedicated to my Father-in-law Jeffery O’Keefe who shares, with me, a mutual enthusiasm for the local community, travel and bringing people together. This one’s for you, Erin Go, Bragh!

1 pt Buttermilk

4 Cups of Flour (level cup)

1 Cup Sugar

1 1/2 tsp Baking Soda

1 tsp Salt

1 tsp Baking Powder

1/2 lb Raisins (steam for a few minutes)

1/3 Cup Melted Butter

Mix the above ingredients in a large bowl and stir in 2 well-beaten eggs and butter. Stir in enough of 1 pt of buttermilk to make a moist – not wet – dough. Spoon into greased pans 8×4 loaf (2) or 9″ round pan or even small foil pans. Bake at 350 degrees for 40 – 50 minutes (or more) depending on pan size. Check with a toothpick. It should come out clean with no dough on it. Erin Go, Bragh!
